I love spring green miracles

Who doesn’t like spring? Flowers blooming all around us, all the trees getting alive and birds singing all day long are just a few wonders of spring.

We had a cold spring so far. With snow at the end of March, I thought that is gone take ages to see green around us. But spring is here and it brought us “The Green Magic”. These are my favorite green miracles in the spring from the garden:

  1. Wild garlic wild_garlic – It is also known as ramsons, buckrams, broad-leaved garlic, wood garlic, bear leek, or bear’s garlic. I am making an amazing Pesto wild_garlic_pesto and Garlic bread gab_7241_res_mix.
  2. Parsley gab_0208_res_mix – I use parsley in a lot of my Smoothies gab_7834_res_mix 
  3. Stinging nettle gab_3340_res_mix – You can add it in your soups, stews, omelets, green juices, smoothies or rice etc.
  4. Spring green onion gab_1029_res_mix1 – So good in salad or (like my little one like it) straight from the garden.
  5. Spinach – Goes great in Green vegan juice gab_3954_res_mix , Spinach and feta cheese pie gab_5563_res_mix and Vegetarian spinach tart gab_4305_res_mix.

  1. Fab photos! Love spring vegetables particularly broad beans, wild leeks, asparagus, wild garlic, baby courgettes with their flowers and enjoy using them in fresh, vibrant dishes.

  2. Beautiful pictures; everything looks so fresh and bright.

    For me, spring hasn’t sprung until the asparagus is available. First, in the stores, then the tender green shoots pop up in the garden, and it’s official! Asparagus grilled and drizzled with lemon juice, asparagus and goat cheese tart, or steamed and dipped in butter or cheese fondue. Best veggie on Earth!
