A few months ago I saw a video of Jamie Oliver making a pie with phyllo dough. I loved the versatility of phyllo dough and made me use it more.
So with my son’s help I made a spinach and feta cheese pie like Jamie made in that video. I don’t remember his ingredients so I used my own.
No meat this time to be a little light. So vegetarians, here is a great pie for Christmas or Easter or any other day.
Ingredients:
- 1 roll of phyllo dough (375g)
- 500g fresh spinach
- 2 eggs
- 150ml milk
- 250mg feta cheese
- Olive oil
- ½ teaspoon nutmeg
- Pepper
Directions:
Preheat oven to 220°C/. Place a baking sheet in a round tray. Prepare the phyllo dough brushing each phyllo dough with olive oil and put it in the tray. You can use all the sheets or only 10.
Cut the spinach in big pieces. In a pot boil the spinach for 5 minutes and then let it cool and drain.
In a bowl mix the feta cheese with an egg, pepper and nutmeg. Mixed just a little, so all ingredients come together.
We gone start assembling the pie by making a layer of half spinach, then a layer of feta cheese and then the last layer of spinach. Bring the corners of phyllo dough all together and then brush it with the mix from 1 egg and milk. Baked it for 30 – 40 minutes.
Serve it hot or cold. Goes great as an appetizer or a side dish. Enjoy!

I think maybe your spinach is more mature than that generally available In the UK (‘baby spinach’) so I would not boil it in water but just wilt it in a saucepan with a tablespoon of water over a low heat. Feta cheese is usually too salty for me so I’d use a crumbly English cheese like Wensleydale. The nutmeg is inspired! I’ll try it soon on one of our ‘veggie’ days.
True. I did use mature spinach. Because I used feta cheese I didn’t add any salt at all and it was great.
This is a bit different then the original Greek Spinach pie..I am Greek/American. we don’t actually add nutmeg into Spanakopita, but it is a lovely addition. 🙂

Yum! Phyllo pastry is a little hard for us to get here, so I’ll try it with puff pastry, frozen spinach and sub the feta with ricotta! Hoping it will turn out… ? 🙂
