One of my favorite wild mushrooms are Chanterelles. They tend to grow in mossy coniferous forests and among grasses and low-growing herbs. They have a funnel shape and are orange or yellow. Chanterelles have a distinctive taste and aroma.
Chanterelles are high in Vitamin C, potassium and Vitamin D.
We eat them with sour cream, in omelet or in risotto. They started as a delicacy in France, being served at the tables of nobility.
You can also dry them and you will maintain their aroma and consistency. Dried chanterelles can be used in seasoning the sauces or soups.
Chanterelles are great, definitely my favorite type of mushroom! I enjoy frying them in some butter and sprinkling some salt and pepper over them.

The mushrooms of my childhood in the forests of the Urals, really great fried together with potatoes. Very hard to find here.

My fiance really wants to go mushroom picking up here in Portland, but funny enough he hates eating them. In other words, I’d be reaping the benefits from his mushroom hunt. 😉 I’m excited!

I love mushrooms! But I have to admit, I’ve always been afraid to pick and eat wild ones not knowing which ones are safe and which ones are poisonous.
