Valentine’s Day is coming soon. So, I made this to surprise my husband. Easy and healthy, made with different nuts and seeds, would go great as a homemade present for a loved one. Even the boys can do it.

Ingredients:

  • 1/2 cup walnuts left in water overnight (keep the water)
  • 1/2 cup cashew nuts left in the water overnight
  • 8 dates
  • 3-4 tablespoons almond milk or water from the walnuts
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup almonds left in water overnight
  • 3 tablespoons melted coconut oil
  • 2 tablespoons carob powder
  • 3 tablespoons coconut flakesGAB_5843_res_mix

Raw chocolate truffles

Directions:

Put everything in the blender except the coconut flakes. Mix it well.

Start making small balls using an ice cream scoop. Roll each candy into coconut flake. Keep it in the fridge all the time.  Enjoy!

      1. I can see the problem there. Perhaps split the batch and make a couple of boozy ones for yourself. You can hide them in the fridge with a big sign on the tupperware saying ‘danger: radioactive cabbage – do not touch’. Haha 😀

      1. I wish I could give you an actual recipe, but I never used one. You just smash up a couple of packets of rich tea biscuits (or whatever your plain biscuit equialent is) and then throw in some crushed nuts (I usually used walnuts and almonds or pistachios) Throw in some some coconut and the baileys and then some melted chocolate until it’s the right consistency, wet enough to roll into a ball and hold together but not too sloppy. Roll it into coconut or more crushed nuts and then chuck them in the freezer to set. You can just be intuitive about it (or pretend to be a mad scientist which is my preference ha!) I’ve also made them using cointreau and thinly sliced orange peel, crystalised ginger, ginger snaps instead of plain biscuits. The possibilities are endless! 🙂

    I made these today and have a few questions.

    1. Did you include all the water from the soaked nuts in the mixture?
    2. Did you put the mixture in the fridge before you rolled it into truffles?

    I wasn’t clear on the instructions so I didn’t include the water from the nuts. I did add 4 tbs of almond milk and found the mix to be too thick for my blender to handle. Then I added 1/4 cup almond milk to thin it out. Haha. Which was just to runny to roll into truffles. So I added some quick oats and started rolling. Still it wasn’t so easy to roll into nice truffles. I ended up putting the mix in the fridge to chill and hope that helps. Ah. So much work for raw truffles. The taste is good but I think next time I will be buying them. Haha.
