Hot! Hot! Hot!
It is so hot, so I need something to cool down. This is waiting for me in the fridge. Yummy!
Ingredients:
- 3 tablespoons Chia seeds
- 200 ml vanilla rice milk
- 1 cup chopped pineapple
- A hand of strawberries
- A hand of wild strawberries
- Mint leaves
Directions:
Combine milk with chia seeds. Mix well until the mixture begins to thicken. Store covered in the refrigerator overnight or for at least an hour. Stir well before serving and add a bit of water to the pudding if it becomes too thick. Add a layer of pudding on the bottom of the glass. On top put a layer of strawberries and then another layer of pudding. Decorate with pineapple, wild strawberries and mint leaves.
Enjoy!
Delectable

Thanks for visiting my blog. I enjoyed visiting yours. I had no idea chia seeds could be used as a thickener. Do you need to add heat, or do they work at room temperature? Will this work with cow’s milk too or just rice milk?
No added heat. Works with any milk.
Way cool. Especially in the summer when I don’t want to heat up my kitchen.
Thank you
