I decided to declare this month a “Raw Vegan Month”, so all this month’s recipes will be raw vegan. After the cheese cake I will tell you about my favorite: chocolate. Simple and healthy, this recipe will be good for you and your kids. I know, because my son loves chocolate.
Ingredients:
- 25 ml cocoa butter
- 25 ml maple syrup
- 15 g cocoa powder
- a hand full of nuts (cashew, almonds,walnuts)
Directions:
Place a sheet of baking paper on a flat oven tray. In a small bowl (on top of a big bowl with boiling water) add all ingredients and stir thoroughly with a spatula making sure to squash out any clumps of cocoa. Pour the chocolate onto the middle of the baking paper, making sure to scrape down the sides of the bowl with the spatula. Carefully pick up the tray and slightly tip the tray forwards and backwards and then right and left to spread the chocolate. Add the nuts on top. Place the tray in the fridge or freezer for ~10 minutes. Remove from the fridge/freezer and remove the baking paper. Break the chocolate bark up into pieces by hand, how big you make the pieces, and how many pieces you make, is completely up to you. Store in an airtight containing in the fridge or freezer.

My husband bought me some raw vegan chocolate for Christmas (Fig and Wild Orange flavour) and it was AMAZING! I’m not actually vegan but I would like to start reducing my dairy intake and I was astounded to discover that chocolate doesn’t have to contain dairy! So it’s exciting to see your recipe for how to make this myself 🙂
