Pasta with chicken and peanuts

I love pasta and most of the time I make it along the way without having a recipe. My favorite one is pasta Carbonara. It is a very heavy recipe for me: sour cream, cheese and bacon are a lot when you don’t have a gallbladder so I eat it maybe once a year.

But, because I love pasta and my little one adores it I am doing home pasta as light I can do. My little one wants meat with the pasta and white sauce and my husband loves pasta only with tomato sauce. He is putting even on Carbonara. Anyway, sometimes I am telling him that we don’t have tomato sauce at home so he would it the pasta the way it should be: with white sauce.

 

Last night I manage to make pasta that it is number one on my list. Chicken, wine, peanuts and pasta and it was “Excellent of good” like my boy said.

Ingredients:

  • 500 g boneless chicken legs
  • Chili powder
  • Salt
  • Pepper
  • Turmeric
  • Cumin
  • 1 teaspoon honey
  • 200 ml white wine
  • Ginger powder
  • 1 tablespoon olive oil
  • 1 hand of peanuts
  • Pasta

Directions:

Put all the spices, wine and oil and a baking pan and mix it. Add the chicken and leave it for 20 minutes. Baked in the oven at 200 degrees Celsius for 50 minutes or until the chicken is done.

Boil the pasta as it says on the package and serve it with the chicken.

  1. Tried it. Was very good. I did modify a bit. Husband likes spicy so I added chilli pepper flakes. Also as I am so conscious of fat I subbed to chicken breast and cut it up to put over the pasta. Thank you for sharing

  2. This looks great. I’ve only recently begun eating peanuts in my food (I used to be a VERY picky eater – some folks would say that is still true). Your combination of flavors sounds delicious. I need to try this – no pasta needed! Thanks for sharing. 🙂

  5. Chicken and Peanuts, what a brilliant combination. Never used them like this as I usually make a Satay sauce and cook the Chicken or vegetables in that as a stir fry.
