Christmassy breakfast

Let me start by saying Happy Holidays! Finally, Santa came. Kids are happily playing with the toys and the parents are enjoying a coffee or hot cocoa.

There are lots of traditions around the globe. When I was a child a use to unwrap the gifts in the morning, but since I got married I follow my husband’s tradition and we do it in the evening. My kid loves it. He used to get a real visit from Santa’s help for the first 8 years of his life. The magic is still on. There is nothing bad in it, in the end is just good time spent with family.

Usually, we have hot cocoa in the morning and omelet, but this year I tried something new: quesadilla. I did that because if you cut it looks like a Christmas tree. Isn’t it festive?

A quesadilla is a Mexican dish that dates back to the 16th century. Traditional quesadillas were made with a corn tortilla that was warmed on a griddle, filled with cheese and various other fillings (meat, vegetables), and then folded over to be eaten by hand.

Ingredients:

  • Tortillas
  • 2 types of cheese (blue and cheddar)
  • Cherry tomatoes
  • Red pepper
  • Chopped onion (I love onion – but is not mandatory)
  • Slices of celery
  • Carrots (I like the tenderness)

Directions:

 Place a skillet over medium heat. Once hot, place a tortilla in the pan and scatter 2 tablespoons of cheese and tomatoes, red pepper, onion, celery, and carrots. Place a second tortilla on top and press down lightly.

Cook on one side for about 1 minute, or until the cheese begins to melt, and then with a large spatula, flip the quesadilla over and cook for another 30 seconds, or until the cheese melts and the tortillas are lightly toasted with a few brown spots. Do as many as you want.

It’s easy and healthy. You can involve your kids in the process and add their favorite ingredients.

Serve it with yogurt or garlic sauce.  Enjoy!

  1. Our tradition has been to make pizza Christmas Eve and eat cold pizza Christmas morning. But we have other things as well. My Dad cooks eggs with pepperoni (it’s an Italian thing). This year we ate cranberry bread a niece made. Yum!
