Smoked salmon spread

Smoked salmon is expensive, in any country. So, I found a way to stretch a package of smoked salmon and impress my guests. First time I had a homemade salmon spread was at our friends and it was great. She told me the recipe, but I did not remember some of the ingredients, so I improvise, like I do most of the time.

Ingredients:

  • 200 g smoked salmon
  • 300 mascarpone
  • 100 g sour cream
  • Salt
  • Pepper
  • Chili flakes
  • 1 tablespoon lemon juice

Directions:

In a food processor combine all the ingredients together and pulse until blended. Serve it with chives on French baguette or as I did: on cucumbers and carrots. It is a mix of textures and tastes and is also very healthy.

  1. I am very lucky, the woman that lives across the road from me is a fish wholesaler, and I am entitled to multiple discounts for living in the same street, being a member of the bowls club she sponsors, and playing on the same team as her son.
    I got some salmon from her, and my mother read a recipe where the salmon is cooked in Honey.
    It doesn’t sound that good, but it is delicious.

  2. I do this too — only with cream cheese, and often the lower-fat version. I add lemon juice and a little chopped dill, using a sprig of dill as a garnish. Yum, you have made me hungry this morning!!
