Meat and vegetables on the grill

It is summer and barbecue time. What goes great with meat on the grill? Vegetables. I confess I love zucchini on grill.  Tomatoes and onions are amazing, too. So when you are tired of mashed potatoes or other side dishes go with grilled vegetables. Put them next to the meat and enjoy it.

It is great for kids too. I know usually they don’t like to eat vegetables. I promise they will like them.

Ingredients:

  • 1 zucchini
  • 1 eggplant
  • 2 – 3 red peppers
  • 1-2 onions
  • Meat – any kind you like

Directions:

Cut the zucchini and eggplant in 1 cm slices. Red pepper cut it in 6 pieces and onion in half. Put everything on the grill and take care of it.

Use tzatziki sauce homemade or a yogurt sauce, goes great with the meat and vegetables. Have some beer for adults and lemonade for kids and you are set for a great afternoon.

  1. So here in the USA, the barbecue aficianados will remind me that unless the meat is outside in a wood or coal fired smoker, it’s not to be called barbecue. What most people are doing is called “grilling”.

  2. I love grilled veggies! Thanks for the reminder. It is even more of a push for me to buy an outdoor grill. I live in a small condo with no yard, but many other residents have outdoor gas grills. Perhaps if I bring over a load of vegetables to share, they will throw some on the grill.
