Rice pudding with pomegranate

This pudding is very easy and has the simplest flavors.  You can also serve it warm or cold. This dessert reminds me of my childhood except for the pomegranate. I learned about this fruit when I was older and I still need to adjust to the taste and texture.

Ingredients:

  • 2 cups whole milk
  • 2 tablespoons rice
  • 3 tablespoons brown sugar (adjust to the taste)
  • ¼ teaspoon homemade vanilla extract
  • 1 pomegranate

Instructions:

Wash the rice. Bring the milk to a boil. Add the rice and cook on medium heat and stir occasionally until the rice is fully cooked.

Add the sugar. You can replace it with honey or maple syrup.

Continue to cook until the sugar has melted. Turn off the heat and stir the vanilla extract.

I usually like my pudding not very thick, but if you want to serve it like I did in the photo it needs to be thick. Remember the pudding will get thicker once cooled. I used a ring to give this shape to the pudding. If it is too complicated or is not too thick serve it in a bowl. It will look great.

Decorate with pomegranate seeds and juice and your dessert is ready.
