I tried a new version of my mom’s corn bread. I like carob powder because is like having a hot chocolate in everything. This time I used carob powder in corn bread. Try it!

You will have a great taste with a beautiful color.

Ingredients:

  • 1 cup all- purpose flour
  • 1 cup yellow cornmeal
  • ½ cup honey
  • 3 egg
  • 3 tablespoons carob powder
  • 5 g baking powder
  • 1 cup kefir
  • ½ cup milk
  • 5 tablespoons oil

Directions:

Whisk the eggs with honey very good. Add the milk, kefir and oil and whisk it more.  

Grease a round cake pan or cast iron skillet well and set aside. Preheat the oven to 200 degrees C. In a medium mixing bowl add the flour, cornmeal, carob powder and baking powder. Whisk to combine well.

Make a well in the center of your dry ingredients and add your eggs mixture. Stir just until the mixture comes together and there are only a few lumps remaining. Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick inserted into the center comes out clean.

 Serve hot or cold. You can also serve it with, sour cream, kefir or jam.

  1. Hi Gabi. Thanks for stopping by my blog. I can see why you liked my chocolate banana bread post! Adding carob to cornbread is an interesting idea — part of that creative experimentation that makes cooking so fun. I’ll have to give it a try. Nice to revisit your blog.
