
I tried a new version of my mom’s corn bread. I like carob powder because is like having a hot chocolate in everything. This time I used carob powder in corn bread. Try it!
You will have a great taste with a beautiful color.
Ingredients:
- 1 cup all- purpose flour
- 1 cup yellow cornmeal
- ½ cup honey
- 3 egg
- 3 tablespoons carob powder
- 5 g baking powder
- 1 cup kefir
- ½ cup milk
- 5 tablespoons oil
Directions:
Whisk the eggs with honey very good. Add the milk, kefir and oil and whisk it more.
Grease a round cake pan or cast iron skillet well and set aside. Preheat the oven to 200 degrees C. In a medium mixing bowl add the flour, cornmeal, carob powder and baking powder. Whisk to combine well.
Make a well in the center of your dry ingredients and add your eggs mixture. Stir just until the mixture comes together and there are only a few lumps remaining. Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
Serve hot or cold. You can also serve it with, sour cream, kefir or jam.

That’s a great idea putting carob in it to give it a more chocolate-like flavour! I’ve never been a fan of cornbread, but this I’ll have to try.
