This is a pie that I really love. I do it in layers or mix the cheese with the spinach.
It is great with any kind of cheese, but feta is the best. This time I added also some blue cheese for a better taste.

Ingredients:
- 1 roll of phyllo dough (375g)
- 500g fresh spinach
- 2 eggs
- 150ml milk
- 250mg feta cheese
- 50mg blue cheese
- Olive oil
- ½ teaspoon nutmeg
- Pepper
Directions:
Preheat oven to 220°C/. Place a baking sheet in a round tray. Prepare the phyllo dough brushing each phyllo dough with olive oil and put it in the tray. You can use all the sheets or only 10.
Cut the spinach in big pieces. In a pot boil the spinach for 5 minutes and then let it cool and drain.
In a bowl mix the feta cheese with an egg, pepper and nutmeg. Add the spinach and use a blender to mix it very well.
Put the mix inside the tray. Bring the corners of phyllo dough all together and then brush it with the mix from 1 egg and milk. Baked it for 30 – 40 minutes.
Serve it hot or cold. Goes great as an appetizer or a side dish. Enjoy!

While your pie sounds like too much work, I like the filling and I have a pie cooker (much easier for me).
So I will combine the 2 ideas and put your filling into my pies. The best of both worlds.

Have you tried it with nettles? It’s very good. Just pick young leaves. They lose their sting once cooked.
