I watched a video with Jamie & Gennaro and all could think about is focaccia. So the next day I made focaccia a la Jamie & Gennaro. I made it with red onion, cherry tomatoes and potatoes, because this is what I had in the kitchen when I start making it. It is not as big as a normal focaccia because I used a bigger tray but it tasted amazing. My kid is in love with focaccia.
In the video you have all the steps you need to do. I made it (as a reader of my blog suggested) a day before and it was a difference. Thank you for your advice.
Ingredients:
- 500 g flour
- 325 ml warm water
- 7 g dry yeast
- Salt
- Cherry tomatoes
- 3 boiled potatoes
- 1 red onion
- Olive oil
- Pepper
- Dried baby spinach leaves
Directions:
Put the yeast in the warm water and mix it very well. In a bowl mix flour with salt and little olive oil and then pour the warm water on top of the flour. Stir it with a spoon until it comes together and then start kneaded. Do it for 10 minutes. Prove it under the bowl for 40 minutes or put it in the fridge for the next day.
Shape the focaccia and before put it in the tray put a layer of semolina. Add olive oil and make loads of holes in the dough. Start making the top of focaccia. I putted some crushed boiled potatoes, red onions pieces and half of cherry tomatoes.
Let it prove under a wet towel for another 45 minutes. When is done add salt and then bake it for 20-25 minutes at 200 degrees Celsius or 400 F.
I like to serve it with a white sauce. Yummy!
