Strawberry jam cake

When your kid wants a small cake with strawberry jam in half an hour is a challenge. I explained that a cake takes a lot of time and work and is not ready in 30 minutes, but he told me: “Come on, mom, I know you can do it! You are the best!”

So, I thought at something easy to make, looks like a cake and takes around 30 minutes. The first recipe that came to me was French toast in the oven. You can find the recipe here.

I only made 2 small cakes to see if he likes them or not.

Ingredients:

  • 2 slices of bread
  • 1 egg
  • 100 ml milk
  • 1 teaspoon maple syrup
  • ½ teaspoon cinnamon
  • 4 teaspoons strawberry jam

Directions:

In a bowl I mix everything together except the bread.  Put small pieces of bread in the mix and let them soak the mix. Arranged the bread with your hand in the forms and pour the left liquid on top. If is not enough (depending on your forms), add more milk on top of the bread. Put jam on top of the bread before put it in the oven.

Bake at 200 degrees Celsius until is done (20-30 minutes). My boy loved the cakes and made me promise to do more next time. Enjoy!

  1. That’s a fun little challenge! Reminds me of 3 minute brownie mixes that bake in the microwave, but I think I like French toast with jam better.

      1. Made them as little cupcakes this morning – heavenly!!!! I also made them all different: with one with sliced fresh strawberries, one with fresh raspberries, one with sour cherry jam and one with strawberries and yogurt

  2. Seems quick to prepare, just cooking time that takes the time. Very tasty sounding & low-calorie too.

    Two questions;
    a) how long do they keep if you were to cook a batch for the fridge?
    b) can you freeze them?

  3. Nice little experiment! If they ask for chocolate cake in a short time have you seen online recipes for cakes make in cups – zapped in a microwave – I’d recommend them!

      1. I don’t usually cook in the microwave either – I mostly own one for defrosting things in emergencies. However, if you NEED cake you NEED cake, he he !
