For a long time I wanted to make gnocchi. I saw a recipe at the TV and it looked so easy, so I thought I can manage to do gnocchi alone. 3 ingredients and you have an amazing dish on your table. I already add them to my “Easy to do” list.
Ingredients for gnocchi:
- 2 potatoes
- 2 cups of flour
- 1 egg
Directions:
In a pot add water and salt and let it boil. Peel the potatoes and add them in the pot. Cook them for 15 minutes. They should be firm and tender. Drain, cool and mash them with a fork.
In a bowl combine the egg, flour and mash potatoes. Knead until you have a ball. Shape small portions of the dough into long “snakes” and then cut them in small 2cm pieces.
Bring a large pot to boil. Drop in the gnocchi and cook them for 3-5 minutes or until they have risen to the top. Drain and then serve them.
You can serve them with sauce, meat or pesto.
I wanted to eat them with green wild garlic pesto but this is gone be only in spring, so I decided to eat them with chicken breast.
In a pan cook the chicken breast after you season it with salt and pepper. After the chicken breast is done add the gnocchi on top and cook for another 2-3 minutes.
I served it with my Red chili jam and fresh green onion. Enjoy!

Good afternoon limitless cook. This is one of the most didactic yet clear recipes for gnocchi, which takes pride place in our Italian culinary culture. My Italian sister-in-law thought she would teach my 6 and 5 year old , and her 3 year old, how to make gnocchi. I still have nightmares about the flour that seemed to stretch from one end of the house to the other. I actually took a hose and broom to the patio. Thanks for the memories…….looks delish

I love gnocchi and they’re definitely on my ‘I’ll have a go at cooking them one day’ list. I still haven’t got round to it! I also like gnocchi roasted in a little olive oil so they turn out like mini roast potatoes. 😊
