Homemade gnocchi with chicken breast and red chili jam

For a long time I wanted to make gnocchi. I saw a recipe at the TV and it looked so easy, so I thought I can manage to do gnocchi alone. 3 ingredients and you have an amazing dish on your table. I already add them to my “Easy to do” list.

Ingredients for gnocchi:

  • 2 potatoes
  • 2 cups of flour
  • 1 egg

In a pot add water and salt and let it boil. Peel the potatoes and add them in the pot. Cook them for 15 minutes. They should be firm and tender. Drain, cool and mash them with a fork.

In a bowl combine the egg, flour and mash potatoes. Knead until you have a ball. Shape small portions of the dough into long “snakes” and then cut them in small 2cm pieces.

Bring a large pot to boil. Drop in the gnocchi and cook them for 3-5 minutes or until they have risen to the top. Drain and then serve them.

You can serve them with sauce, meat or pesto.

I wanted to eat them with green wild garlic pesto but this is gone be only in spring, so I decided to eat them with chicken breast.

In a pan cook the chicken breast after you season it with salt and pepper. After the chicken breast is done add the gnocchi on top and cook for another 2-3 minutes.

I served it with my Red chili jam and fresh green onion. Enjoy!

  1. I have always wanted to make them as well but always been a bit wary as I had heard they can come out like greasy bullets if you overwork etc etc…So maybe now you have I will have a go 🙂

  2. Good afternoon limitless cook. This is one of the most didactic yet clear recipes for gnocchi, which takes pride place in our Italian culinary culture. A legend says that a wandering saintly man knocked on the door of a poor peasant’s hut in a very cold evening in the Veneto. He asked the poor couple for food and shelter for the night . Generously the couple served him a dish with five gnocchi and tomato sauce; they ate the other two left. After spending the night the Holy man said:” you will be properly compensated for this good deed.”
A few days later the town’s notary showed up at their door to let them know that they had inherited a large tract of land from a deceased relative. What was that day? The 29th. That’s why we, the proud people of Italian heritage, eat a plate of gnocchi each 29th day of the month. Arrivederci!

  3. My Italian sister-in-law thought she would teach my 6 and 5 year old , and her 3 year old, how to make gnocchi. I still have nightmares about the flour that seemed to stretch from one end of the house to the other. I actually took a hose and broom to the patio. Thanks for the memories…….looks delish

  4. Thanks for the recent like on my blog. Your homemade gnocchi looks delicious – I had no idea how easy it was to make!!

  5. I love gnocchi and they’re definitely on my ‘I’ll have a go at cooking them one day’ list. I still haven’t got round to it! I also like gnocchi roasted in a little olive oil so they turn out like mini roast potatoes. 😊

  6. Looks so good! I’ve just made chilli jam for the first time ever with Scotch Bonnets (I know – hot!) and I LOVE it. Sweet and hot at the same time.
