Salads can be healthy, satisfying meals on their own or perfect accompaniments to main dishes. Here is one of the best salads I’ve made in a long time. It’s a new combination, but it taste great and of course is very healthy.
1 handful arugula
freshly ground black pepper
1 teaspoon olive oil
1 handful mango, chopped
50 g blue cheese
1 tablespoon lemon juice
50 g sour cheery and wild berries compote
Place the mango, arugola and the compote in a large salad bowl and toss until combined. Add the lemon juice and the olive oil. Season to taste with salt and pepper. Divide the salad between your plates and crumble over the cheese. Decorate every plate with a slice of orange. So simple, but so delicious!
