This recipe I love to make at Christmas or Easter. I change a few ingredients and are perfect. Here is the recipe for Easter. Yummy!!!!
4 big apples or 6 small
100 ml milk
4 tablespoons muesli
100 g almonds
2 tablespoons crumbled biscuits
50 ml rum
2 teaspoon cinnamon
For the vanilla sauce :
500 ml milk
3 egg yolks
2 teaspoons flour
1 teaspoon vanilla extract
250 g sugar
Preheat oven to 180 degrees C.
Wash apples. Core apples, making sure not to puncture the bottom of the apples so that the juices will remain. It helps if you have an apple corer, but if not, you can use a paring knife to cut out first the stem area, and then the core (this is what I used). Use a spoon to dig out the seeds.
In a small bowl, combine cinnamon, almonds, muesli and the crumbled biscuits in a bowl with the warm milk and then add the rum. Place apples in a grease square baking pan. Stuff each apple with this mixture.
Bake 30-40 minutes, until tender, but not mushy. Remove from the oven.
For Christmas, change almonds with raisins and rum with whiskey.
For the vanilla sauce, in a small saucepan over medium heat, bring the milk to a simmer. Meanwhile, in a medium bowl, whisk the egg yolks and the sugar together until a ribbon forms when the whisk is lifted from the mixture. Add the flour. Whisk constantly while slowly pouring the hot milk into the yolk-sugar-flour mixture.
Return the mixture to the saucepan. Over low heat, stir constantly with a wooden spoon until the mixture thickens. Be careful not to overcook or the eggs will scramble. The sauce is finished when you can dip a spoon into it, then draw your finger over the back of the spoon and have a track remain that is almost free of sauce.
Remove the sauce from the heat and stir in the vanilla. This is the best vanilla sauce I tasted.
Put an apple on a plate , add vanilla sauce and decorate with cinnamon sticks and chocolate.Enjoy!
