Three Cheese Quesadillas

These are so easy and taste so good. I learned this recipe when I eat in a Mexican restaurant. I am not exaggerating when I tell you there are NEVER leftovers. You can even prepare them ahead of time and cook when you are ready.

Ingredients:

4 flour tortillas warmed

1-1/2 cups shredded cheese (blue cheese, brie and cheddar)

Directions:

Place the tortillas on a greased baking sheet. Combine the cheese in a bowl and then spread some on the tortillas. Try not to get it too close to the edge. Top with remaining tortillas. Cook on a griddle over medium heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with salsa and sour cream if desired. I love it with guacamole. You can find the recipe on my page.  Enjoy!
