Soya and pea stew

Pea and soya stew

This is a quick second course for vegetarians and vegans and an excellent source of vegetable proteins. The recipe is very easy and is great for the less experienced cooks.

Ingredients:

  • 200g soya chunks
  • 400g canned peas
  • 1 cup vegetable stock
  • 1 onion
  • Olive oil
  • 1 cherry tomato sauce can
  • 1 garlic glove
  • Salt and pepper
  • 1 teaspoon mustard

Directions:

Boil the soya chunks till they are done as indicated on the bag. Chop the onion and the garlic. In a pan add olive oil and sauté the onion and the garlic. Add the soya chunks, the peas, and the vegetable stock. Let it simmer for 5 minutes. Add the mustard, cherry tomato sauce, salt, and pepper. Let it simmer for another 5 minutes.
