Mom’s donuts

I love donuts. The one filled with lots of sugar and fried in oil. They are so tasteful but in the same time so not healthy for you. For years now, I made my donuts as light as possible, most of the time baked in the oven with maple syrup or honey.

But, sometimes you need to remember the taste of you childhood. And I did.

My husband saw two days in the row at the TV donuts and told me that he wants to eat donuts. I said no problem, I will make some. We bought a waffle machine and you can make donuts too. He looked at me and said he doesn’t want my healthy donuts. He wants the “normal donuts, the original”.

So, I asked my mom to make them, because you will never cook or bake like your mother. We are used with our parents cooking and baking, that it takes a lot of time to eat different.

My mom made these amazing “normal donuts” and they were great. I ate 10 of them and I was in heaven. I can have a day with white sugar once a few months. It was worth it. So, THANK YOU mom.

Donuts

Ingredients:

  • 250 ml milk
  • 500 g white flour
  • 150 g sugar
  • 3 tsp active dry yeast
  • 3 eggs
  • ½ tsp salt
  • 100 ml oil
  • Zest from 1 lemon
  • 2 Tablespoon vanilla-rum extract
  • 2 pouches vanilla sugar

Directions:

In a small bowl, combine the dry yeast with 1 tablespoon of sugar and ¼ of the warm milk. Mix for 1 minute to dissolve the yeast and let it rest for 5-7 minutes.

In a large bowl place the white flour and make a hole in the center. Sprinkle the salt and pour yeast and the milk mixture over flour.

Add the eggs, remaining sugar & milk, lemon zest, vanilla-rum extract and vanilla sugar.

Mix to incorporate all ingredients with a spoon. Add the oil a little at a time and knead with your hands for about 15-30 minutes, until the dough will not stick to your hands. For a good dough the important thing is to knead as hard as you can.

Cover with a clean towel and place in a warm spot. Allow dough to rise until double in size.

Roll out to be about 1/2 inch thick. Use a glass to make the donuts.

Pour a quart or 2 of oil into a heavy-bottomed pot. Stress on the heavy bottom because this oil gets HOT!!

Cook a couple doughnuts at a time until they’re golden. Let them cool a bit and then just powder sugar on top of them.

  2. “… you will never cook or bake like your mother…” – truer words were never spoken. Also, admitting you ate ten of your mother’s doughnuts made me laugh out loud; they must be really good. I don’t have the patience to make them but I sure enjoyed your delicious post.

  3. Thank you for your post. I will have to try these. When I was growing up we would go to the apple cider farm in the fall and buy apples and cider. When we returned home my mom would make donuts. When they were cooked we would have cider and donuts. Still after all these years (I’m 64) I crave apple cider and donuts in the fall but have never been brave enough to make them.
