My father loved going fishing. It was a great way to relax and enjoy nature. He will also clean the fish and cook it. He used to make a mean fish stew. A few days ago, me and my mom, tried to make a fish stew with my dad recipe. Anyway, what my mom remembers.
My neighbor brought fresh fish and my husband said he is gone clean the fish as long I can cook it. I hate to clean the fish. So imagine my husband, on the edge of a small creek near our house, cleaning the fish. In 1 hour all the cats in the neighborhood were enjoying a show waiting for food.
We didn’t have a recipe with quantities, so we put it the way we felt is balancing the fish. My mom always cooks like that and her food is great.
Ingredients:
- Fresh fish
- Carrots
- Celery
- Fennel seeds
- Garlic gloves
- Leeks
- Fresh tomatoes or tomato juice
- Vegetable or fish stock
- Oil
- Vinegar
Directions:
Heat the oil in a large pan and then add fennel seeds, carrots, celery and garlic all chopped and then cook for 5 minutes until is starting to soften. Add the leeks, tomatoes and stock and bring to boil. Add the fish and vinegar. Vinegar will soften the fish bones. We used small fish so we left the bones.
You need to let it simmer for 2 hours minim, so the bones are soft. If you use big fish without bones you don’t need to simmer so much.
Ladle into bowl and serve with a spoon and it goes great with our Romanian “mamaliga”. Decorate with lemon and fresh parsley. Enjoy!
