A few days ago my fridge was almost empty. You know the feeling when you’re hungry but the fridge is not giving you too many options. With just a few things in it I managed in the end to make a really nice recipe (inspired by others).Easy and healthy.
Ingredients:
1 leek, clean and cut in thick pieces
2 eggs
10 g flour
200 ml milk
50 g salty sheep cheese
pepper
Directions:
Preheat oven to 200 degrees Celsius. In a bowl, beat the eggs with the flour and then add the milk. Seasoning with pepper. I didn’t use salt at all because I used a salty cheese.
Boil in a pot the leek for 5 minutes and then drain it.
Coat with butter a heat proof bowl and then put the mix of egg and milk in it. Arrange the leek pieces in the bowl and add the cheese. Bake it for 20-30 minutes. Check all the time the color. If it’s brown you can take it out.
Serve it hot with salad. Enjoy!
