I discovered the kaki fruit (Fuyu persimmons) last year when my husband told me is so healthy and good and I have to try it. I can tell you that I start eating kaki as eating apple, without even peel it. It’s great, but most of you already know that. 2 weeks ago I tried a salad (my own recipe ). I was in the kitchen and I was hungry and I wanted to eat something healthy so I improvised. Here is what I end up with, and I loved it. Try it and tell me your opinion. Will be great to see if you like it or I just have weird taste in food.
2 medium peeled kaki
1 pinch salt
1 pinch pepper
3 tablespoons sour cream (optional)
2 teaspoons grape seed oil
a pinch of rosemary
Slice the cucumber, kaki and pear. For the dressing, add in a bowl salt, pepper, rosemary, grape seed oil and mix them. On a serving plate put the kaki, pear and cucumber. Drizzle dressing on salad and if you like it you can also put on top of it, sour cream. Enjoy!

Yum, that looks great. Recently I’ve also started to appreciate mango in a salad. More than kaki even!
True. I like playing with fruits and vegetables in the salad.
Oh, persimmons are delicious! Never thought of adding it to a salad though – gotta try it 😊
Tell me if you liked it.
