I discovered the kaki fruit (Fuyu persimmons) last year when my husband told me is so healthy and good and I have to try it. I can tell you that I start eating kaki as eating apple, without even peel it. It’s great, but most of you already know that. 2 weeks ago I tried a salad (my own recipe ). I was in the kitchen and I was hungry and I wanted to eat something healthy so I improvised. Here is what I end up with, and I loved it. Try it and tell me your opinion. Will be great to see if you like it or I just have weird taste in food.
Ingredients:
2 medium peeled kaki
1/2 cucumber
1 pear
1 pinch salt
1 pinch pepper
3 tablespoons sour cream (optional)
2 teaspoons grape seed oil
a pinch of rosemary
Directions:
Slice the cucumber, kaki and pear. For the dressing, add in a bowl salt, pepper, rosemary, grape seed oil and mix them. On a serving plate put the kaki, pear and cucumber. Drizzle dressing on salad and if you like it you can also put on top of it, sour cream. Enjoy!
