Almonds roulade with pear cream

I know that it sounds very fancy, but actually is a really easy recipe, and the most important thing is that is my first food experiment. I don’t know if this recipe exist, all I know is that I started without any recipe in front of me, I improvised and in the end was very good. So lets start our adventure.

In a bowl, make a powder of 200g biscuits. You can add brown sugar if biscuits are not sweet enough. I use Bosch MMR08R1 midi chopper which does a great job. After you are happy with the result, add 2 tbsp coconut oil and 2 tbsp cinnamon.Add  warm milk till you form a pliable dough. Let it cool aside and start preparing the filling.

Peel 3 medium pears and cut them in pieces in a bowl. Mix them with 2 tbsp coconut oil and then put them in the fridge for 15 min.

Lay a piece of fresh greaseproof paper out and flip the dough over onto it, carefully pull away the used paper and discard. Spread the pear cream over it . Roll the dough up using the paper to help turn it over. Put on a serving tray and put it in the freezer.

You can serve it simple, with chocolate syrup or my favorite way: with ice cream. Yummy! Enjoy!
