Apple cake with blackberries on top


Get ready for a treat. My mother in law is making this cake a lot and is amazing. You can use any fruits to put on top or even inside.  Try and make amazing combinations if your kids love other fruits. It’s a healthy cake for everyone.



– 500 g  apples

– 1 tablespoon cinnamon

– juice of ½ lemon

– 250 g butter, softened

– 250 g brown sugar

– 4 eggs

– 2 tablespoon vanilla extract

– 350 g self-raising flour

– 2 tablespoon baking powder

– powder sugar, to sprinkle

– 1 cup blackberries


Heat oven to 180 C. Butter and line a rectangular baking tin with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over and add the cinnamon on top . Set to one side.

Place the butter, brown sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers.  Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares, sprinkle powder sugar on top and decorate with blackberries.
