I never prepared quinoa before so I said let give it a try. I stopped eating meat 2 months ago so all my recipes need to have more proteins. As you know, quinoa is one of them, so I need to make recipes with quinoa as often as I can. We also love stinging nettles and in the spring is the perfect time to eat them. You can pick yourself fresh stinging nettles. Choose the small one, which are great this period of time.
I made muffins, because my son loves muffins. He likes the shape, and if is chocolate inside is the best. This time we tried a healthy muffin.
- 500 g stinging nettles
- 2 eggs
- 200 g quinoa
- 2 tablespoon olive oil
- salt and pepper
In a large pot of boiling water drop in the stinging nettles and cook 2 to 4 minutes until they are soften.
This will remove the stinging. Drain in a colander and rinse with cold water. With a blender mix the nettles and the egg.
In another pot boil the quinoa, drain and rinse with cold water. Add the quinoa and olive oil to the nettles mix. Use as much salt and pepper you like.
Put the mix in the muffins shape and put them in the oven and bake for 15-20 minutes or until they are done. Each oven is different so the time is not usually the same.
You can serve the muffins cold or warm. My boy loved them in the morning. Of course, next I have to make the chocolate muffins.
