Cacao macaroni pudding

I bought cacao pasta for the first time. I wanted to do macaroni and cheese pudding, but, my son is having a no cheese period so I thought to use mascarpone so he wouldn’t realize that there is cheese in it. My mom’s recipe is with fresh cheese.

This macaroni and cheese pudding is your regular Mac and cheese…but with a twist. This recipe promises and delivers a special dessert.

My macaroni and cheese pudding has a few “tricks”:

  • I didn’t use regular cheese but mascarpone.
  • I used honey instead of sugar.
  • I used cacao pasta.

Ingredients:

  • 250 g cacao pasta
  • 1 egg
  • 250 g mascarpone
  • 1 cup yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • Homemade vanilla extract
  • Butter for coating the baking tray

Directions:

Boil the pasta as directed on package, and then drain and rinse in cold water. Pour a little oil and stir well. In a bowl beat the egg, honey, lemon juice, cinnamon and vanilla extract. Add mascarpone and then pasta and mix them well with a spoon. Coat with butter a baking tray. Pour everything in the tray and bake on medium heat. Remove when pudding gets a brown crust.

You can serve it hot or cold. Enjoy!

  1. Very interesting! The only thing I have seen in the U.S. that is remotely similar is sweet kugel, a European Jewish dish that can also be savory, or bread pudding, that has raisins and lots and lots of butter and milk. This is a cool twist on the idea that I’m tempted to try!!

  2. Blimey, but that looks good! I wonder if I could make it with ordinary gluten-free pasta (I’m sure I’ve never seen chocolate pasta anywhere). I guess, I’m just gonna give it a go. Can’t hurt, eh?

  3. This is so neat! I did not know such a thing existed. My daughters and I were just talking about cacao and where chocolate comes from. They love to learn about things like that. Keep up the good work!
