Honey Fungus Borscht

It is that period of time: wild mushrooms. We take our family and go foraging wild mushrooms. We get them prepared for the winter or cooking them for now. I don’t like very much to eat this mushrooms but I love foraging them. Actually I love foraging all wild mushrooms.

Spending time in nature and getting your food is a great way to teach your kids about nature, food, animals, etc.

Honey fungus in our country are named “ghebe, pipinci or popici” depending the area.

Ingredients:

  • 1 root parsnip
  • 1 root celery
  • 2 onions
  • 500 ml broth
  • salt
  • pepper
  • 1 parsley
  • 2 carrots
  • 1 red pepper
  • 1 liter borscht 
  • 1 hand green parsley
  • 1 hand chopped white cabbage
  • 2 hands Armillaria mellea mushrooms – honey fungus

Directions:

Clean and cut all the vegetables and boil them in 2 liters of water for 30 minutes. Clean the mushrooms very good, cut them in pieces and add them to the vegetables with the broth. Boil them for another 30 minutes.

Boil the borsch and then add it to the mushrooms. Before finishing add the green parsley.
