Today, the Irish people celebrate St. Patrick’s Day, which is the Patron Saint of Ireland. Since 1961, St Patrick has also been regarded as a patron saint of Nigeria, too.
Dress in green, where a green wig, drink pints of Guinness, eat something green or cook Irish stews are way to celebrate the day. The emphasis on green is thought to be linked to “wearing the Green”, a symbol from the 18th century on, of sympathy with Irish independence.
Wearing green has now become associated with St Patrick’s Day, even though the saint was originally associated with the color blue.
According to legend, people wear green to makes themselves invisible to leprechauns, who would pinch anyone they could see.
Popular Irish toasts on St Patrick’s Day, include: may the roof above us never fall in, and may we friends beneath it never fall out
For those who want to do something different and vegetarian I have a spinach and goat cheese tart that I think goes well for this day.
Ingredients:
- 1 roll of puff pastry (375g)
- 500g fresh spinach
- 2 eggs
- 150ml milk
- 250mg goat cheese
- ½ teaspoon nutmeg
- Salt and pepper
Directions:
Preheat oven to 220°C/ (200°C for fan assisted ovens). Place a baking sheet in the tray. Put the puff pastry on top of the baking sheet. Baked for 10 minutes.
Put the spinach in a kitchen robot and add the eggs, milk, half the cheese, nutmeg, salt and pepper. Mixed just a little, so all ingredients come together.
Take the pastry out and press it in the middle if is swollen. Put the spinach mix on top of the pastry. Top it with the rest of the cheese. Baked for another 15 minutes.
Serve it hot or cold. Goes great as an appetizer or with some meat near. Enjoy!

When I was little my mom use to make me pizza with slices of old hard bread instead of dough. You can try with gluten-free bread or gluten-free dough.
I’d try with old hard GF bread…

Hi. I made the watermark in Photoshop from a text and then I add it as a new layer in Photoshop and saved as a new photo, so I can have the original too.
Hi, you can also watermark in Lightroom as well, in the drop down menus look for edit watermark.
