Raw vegan cheesecake with clementine

Let’s have a great vegan dessert. One of my favorite: cheesecake. These easy cheese cake takes 3 steps: make the crust, make the filling and arrange the cake. When you want something different and healthy go with this cake. It is perfectly sweet, creamy, smooth and satisfying.

Ingredients for crust:GAB_7411_res_mix

  • 1/2 cup oats
  • 1/2 cup almonds left in the water overnight
  • 3 dates
  • 2 tablespoons almond milk

Ingredients for filling:

  • 1 and 1/2 cup cashew nuts left in the water overnight
  • 2 tablespoons maple syrup
  • 5 tablespoons clementine juice
  • 3 tablespoons almond milk
  • ½ teaspoon vanilla-rom extract

Slices of clementine for decorations

Directions:

For the crust, add all the ingredients in a food processor and blend until small bits remain and it forms into a ball. Remove and set aside.

For the filling do the same thing. Add all the ingredients in a food processor and blend it. The vanilla-rom extract is my homemade vanilla extract made with rom instead of vodka.

Prepare small cake squares with parchment. Add the crust first and then the filling. Leave it in the freezer for 3 hours. Take it out of the cake squares and then decorate. Enjoy!

  1. For the oats, what kind do you use? Is is like the oats we use for oatmeal? We can get rolled or steel cut. I love all the ingredients in this recipe, surely this will be one for me to try.

  2. I have not explored vegan food, but I see it often. I was looking at a book the other day. Making flourless cakes is something old. In the book, I was introduced to the flourless Austrian torte. Maybe there is something interesting there to observe. Cashew butter seem good to me. Your cheesecake is very attractive.

  3. YUM! My mom used to make the best cheesecake (at least in my opinion) when I was a child, and I always crave it but never get the chance to find a “healthier” version. However, this vegan cheesecake of yours is perfect! Can’t wait to try it out! xo, Steph
