Here’s a handy and versatile side that’s creamy, colorful and bursting with flavor and nutrition. You can have it as side dish or evening meal. It’s light and very tasty. You can make it for Easter.
4 tablespoons butter
1/2 cup finely chopped onion
3 tablespoons flour
1 1/2 cup hot milk
1 1/2 cups grated sharp cheddar
2 heads broccoli, cut into 2-inch pieces, quickly steamed
Melt 2 tablespoons of butter in medium saucepan over medium high heat. Add in onions and cook until translucent, about 4 minutes. Stir in flour and stir to coat onions. Cook for 2 minutes. Remove from heat and whisk in hot milk. Return to heat and bring to a simmer. Stir in cheese by the handful.
Add broccoli to the cheese sauce and pour into buttered casserole dish.Bake until bubbly and lightly browned, about 20 minutes. Enjoy!
