Because I am still at low meat or no meat diet, after Christmas, I will give you an adapted recipe for broccoli and cheese soup. This soup, creamy and cheesy is classic comfort food with a lot of flavor. Vegetables are steamed so the recipe is the healthiest you can get. The recipe calls for pureeing the soup in a blender. I have an immersion blender and it worked just fine. Just be careful not to mess up the kitchen.
Ingredients:
500 g broccoli, chopped into florets, trunks pared and chopped
1 big potato
2 tablespoons butter
3 cloves garlic, chopped
1/4 teaspoon ground nutmeg
3 cups shredded sheep cheese
1/4 cup of goat cheese
1/2 cup sour cream
1.2 l water
pepper
Directions:
Steam the broccoli and the potato. In a bowl, add cooled broccoli and potato, butter, sheep cheese, goat cheese, garlic, nutmeg and sour cream. Puree soup with the immersion blender or in a blender and add water till you make it smooth. Taste and adjust seasoning. Can be served cold or hot with cheese or croutons. Enjoy!

tried this, but just used parmesan and cream cheese since i didn’t have sheep and goat cheese on hand. i still think it turned out delish though 😀

I had talked to a friend recently about a broccoli Powerpuff Girls episode we saw as kids. The heroes were fighting broccoli monsters by shooting cheese at them. This soup can be them calling a truce, lol 🙂 I look forward to making it!
